Meat buying resources

The fall is the season to purchase local meats that have grazed their way through the season up here in the mountains. Packing the freezer with unfamiliar cuts and planning winter cooking can be a daunting task for some home cooks. These resources will ensure delicious eating for months to come. Search the farms section of the Pure Catskills directory to find meat producers near you.

This comprehensive guide describes each cut of pork and beef a customer might get when making a whole animal purchase. It also includes tips on handling, processing and storage.

Matt LeRoux of CCE answers common questions about livestock terminology, production methods and processing in this guide for consumers.

Find neighbors looking to share meat from a whole steer, hog or lamb. This is also a great resource to swap excess produce from the growing season.
